Peanut butter pancakes
These pancakes fill you up for hours. The recipe gives around 6 pancakes. To make them gluten free, simply substitute the flour with gluten free flour.

Ingredients
- 3 eggs
- 2 tbs brown sugar
- 2 tbs psyllium husk fiber
- 2 tbs flour
- 2 tbs shredded coconut
- 2 tbs neutral oil
- 2 tbs peanut butter
- 2 dl milk
- 1 ts vanilla extract
- butter for frying
Instructions
- Whisk eggs, sugar and psyllium husk fiber
- Add flour, shredded coconut, peanut butter and oil. Whisk until you have a dough-like mixture before you add the milk and the vanilla extract.
- Fry the pancakes with butter on medium heat. The mixture will be pretty thick, so you will need to spread it around the frying pan with a spoon.
- Serve with any topping you like! Fresh fruit, brown cheese, butter, peanut butter ......
