Ricotta pizza
Vegetarian pizza with two types of cheese, mushrooms, onions, and potatoes.

Ingredients
- 1 small pizza crust
- 125 g ricotta cheese
- 2 medium sized potatoes
- 0.25 red onion
- 50 g oyster mushrooms
- 150 g parmesan (or more if you like)
- dried thyme
- salt
- black pepper
- fresh basil
- olive oil
- balsamic vinegar
Instructions
- Preheat the oven to 200 C, and prepare the pizza crust.
- Cut thin slices of the potatoes and put them on a baking sheet. Add olive oil, salt, black pepper, and dried thyme. Bake them until they are slightly brown, about 10-15 minutes.
- Cut the onion into thin slices and the mushroom into small pieces.
- Whisk the ricotta cheese until creamy and add it evenly to the pizza crust.
- Shred parmesan until it covers the crust, grind some salt and black pepper, and sprinkle dry thyme on top of the cheese.
- Add the baked potatoes, onion and mushroom before you add a little more parmesan on top.
- Bake the pizza for ~10 minutes before you garnish with fresh basil, some extra parmesan, olive oil and balsamic vinegar.
